The Science of Coffee Roasting

Coffee roasting involves a complex chemical process when raw coffee beans are exposed to heat. During roasting, the beans undergo a series of physical and chemical changes that affect their flavor and color. The temperature and duration of the roasting process are critical in determining the final result.

The first phase of the roasting is drying. During this stage, the moisture content of the beans is reduced, and the beans begin to turn yellow. As the roasting process continues, the beans enter the Maillard reaction stage, where the heat causes chemical reactions that create new flavors and aromas. At this stage, the beans begin to turn brown and develop the unique taste and fragrance of the coffee.

In the second phase, the beans undergo a second phase of the Maillard reaction, forming more complex flavor compounds. This stage is important to achieve the desired flavor profile, which can take anywhere from a few seconds to several minutes.
