Background Info:

Sayisa is a lot produced by Tadesse Desta’s Buku Sayisa Mill in the western part of Guji. The coffee grown locally is mostly Welisho & Dega, and is grown at extreme altitudes, and picked by smallholders throughout the Gingo Bedesa district.

They deliver fresh cherry to the mill, before sorted and an extended natural fermentation – between 20-30 days. All the classic Guji dark berry characters are present, lifted by a playful almost-carbonated acidity and candy-like florals.
